I would like to create a sit in/take away bistro with a theme based around potatoes. Scotland produces lots of different varieties of potatoes and I would sell small healthy dishes to people who want to sit in the bistro, or they could order food to be delivered to their offices. I believe there is a demand for lunch meals in the city centre that are reasonably priced and not a sandwich or wrapper.The food preparation area will be open plan or even like a bar area so that the customers can see what goes into their food.
